Old Fashioned Lemon Bread
Old Fashioned Lemon Bread
Ingredients
- • 1 1/2 cups all-purpose flour
- • 1 cup granulated sugar
- • 1 teaspoon baking powder
- • 1 1/2 teaspoon salt
- • 2 large eggs
- • 1 2 cup whole milk
- • 1 2 cup vegetable oil
- • 2 teaspoons grated lemon peel
- • 1 3 cup sugar (for glaze)
- • 1 4 cup lemon juice (for glaze)
- • 1 whole zest of one lemon
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8x5-inch loaf pan lightly with oil or butter.
- In a medium mixing bowl, combine the flour, sugar, baking powder, and salt until evenly distributed.
- In another medium mixing bowl, whisk together the eggs, milk, vegetable oil, and grated lemon peel.
- Gradually incorporate the dry ingredients into the wet ingredients, stirring until just moistened. Avoid overmixing.
- Pour the batter into the greased loaf pan, spreading it evenly.
- Bake in the preheated oven for 40–45 minutes, or until the bread’s surface is golden, and a skewer or toothpick inserted into the center comes out clean. If necessary, bake for an additional 5 minutes.
- Let the bread cool in the pan for 10 minutes. Poke several holes in the top of the bread using a wooden skewer, ensuring the holes reach down to the bottom of the loaf.
- To prepare the glaze, heat the sugar, lemon juice, and additional grated lemon peel in a small saucepan over medium heat, stirring until the sugar is fully dissolved.
- Drizzle the prepared glaze evenly across the top of the bread, allowing it to seep through the holes.
- Let the bread sit until the glaze is fully absorbed and the loaf has cooled to room temperature before slicing and serving.
